The Wüsthof 7” Classic Hollow Ground Chai Dao is a Chinese-style chef's knife that combines a classic Chinese design with modern Wüsthof features. A multi-purpose knife, the Chai Dao is a blend between a wide chef's knife and santoku, borrowing all the best parts from each to create one incredible tool. All function and finesse, its wide belly has a more pronounced curve than a typical chef's knife, allowing you to rock the knife as you slice to get an extremely thin mince or a rough chop with ease.
Short enough to control, but wide enough to get the job done done, the extra width is ideal for scooping up ingredients from the cutting board and transferring them to a pan. Hollow-ground depressions alongside the edge create air pockets that make it hard for starchy or wet foods to stick to the blade, so you can cut in one smooth, uninterrupted motion. Part of the Wüsthof Classic line, the Chai Dao is precision forged from a single piece of high-carbon stainless steel. The one-piece construction features strong full tang and a triple-riveted POM handle, making the Classic exceptionally durable, balanced, and a beautiful piece of craftsmanship.
